Lox and Cream Cheese TikTok Tortilla Hack
Serves 2 people
2 - 12 inch Flour Tortilla
4 slices - Smoked Salmon
1 TBSP - Capers
¼ cup - Pickled Red Onions (Red Onions marinated with Seasoned Rice Vinegar)
½ cup - Whipped Cream Cheese
¼ cup - Diced Boiled Eggs
1 cup - Arugula
2 TBSP - Extra Virgin Olive Oil
1 TBSP - Lemon Juice
Pinch of Salt and Pepper
Take both flour tortillas, lay flat on the plate and make one slit on both piece about half way up, starting from the bottom.
Place your arugula in a mixing bowl, drizzle with olive oil, salt, pepper and lemon juice.
Spread your cream cheese evenly over the whole tortilla facing up. Then look at your tortillas as quadrants. Place the smoked salmon and arugula on the top left quadrant, then on the top right, sprinkle the capers and chopped eggs, and then the bottom right quadrant lay out the pickled red onions. You will leave the bottom left quadrant with cream cheese only.
Starting with the bottom left, fold over the top left, then take that and fold over the right top quadrant. Then finish with folding over the right bottom quadrant. It’ll look like a little triangle package.
With a medium high pan and pan spray, sear your tortilla on both sides until light golden brown. You want to sear on higher heat to ensure you do not heat the ingredients up much. You still want it cold.
Cut the triangle in half and serve with your favorite Mermosa Wine!
